Unlike many other green teas, the essentially untouched large leaves of the plant are rolled into thin, delicate twists. For good reason, Yunnan Mao Feng is renowned and popular worldwide and is considered one of China&#8217;s top ten green teas. Among moderately caffeinated teas, it belongs to the mildly scented and vivid yellowish-green coloured infusions. Before brewing, use hot water to rinse your teapot and teacups. Use approximately 5 &#8211; 6 g of tea leaves (2 &#8211; 3 teaspoons) for every 150 \u2013 250 ml of water. For the first and second infusions, pour 70\u00b0C water over the tea leaves and steep for about a minute. For each subsequent infusion, progressively increase the steeping time and the temperature.<\/p>\n<p>Make sure the water&#8217;s temperature never exceeds 70\u00b0C. If done correctly, you&#8217;ll soon notice a honey-like aroma enveloped in the brewing steam, and no bitter taste should emerge. You can steep these leaves up to three-four times.
