Description

MaoFeng Yunnan is a natural early-harvest green tea, where the picking can begin as early as in the month of February. Unlike many other green teas, the essentially untouched large leaves of the plant are rolled into thin, delicate twists. For good reason, Yunnan Mao Feng is renowned and popular worldwide and is considered one of China’s top ten green teas. Among moderately caffeinated teas, it belongs to the mildly scented and vivid yellowish-green coloured infusions. It’s light and highly invigorating.

Although it is undoubtedly a delightful tea to drink while having company, we believe it’s better suited for tea sessions that involve personal time, or “me-time.” It can provide a much-needed change of pace from monotanous everyday duties and allow you to focus solely on yourself in the moment and the distinctive experience of Yunnan Mao Feng.

Preparation

To prepare, we recommend using a glass or porcelain tea set. Before brewing, use hot water to rinse your teapot and teacups. Use approximately 5 – 6 g of tea leaves (2 – 3 teaspoons) for every 150 – 250 ml of water. For the first and second infusions, pour 70°C water over the tea leaves and steep for about a minute. For each subsequent infusion, progressively increase the steeping time and the temperature.

Make sure the water’s temperature never exceeds 70°C. If done correctly, you’ll soon notice a honey-like aroma enveloped in the brewing steam, and no bitter taste should emerge. You can steep these leaves up to three-four times. The second cup will have more nuanced flavours with subtle notes of fruit, florals, and nuts, while the first cup will have you experiencing strong aromas.
