Description:
This particular Yunnan Pu-erh tea has been harvested in the spring of 2003 from a small, local producer in Yi Wu. The tea leaves have been carefully chosen, hand-picked, and prepared from wild tea trees that only grow at high altitudes. The puerh ‘pancakes’ were stone-pressed and aged in Yi Wu and later in Kunming. The tea has a rich, robust flavor profile that is smokey and reminiscent of fruits and nuts, in particular walnuts. It has a flavor that lasts for a considerably long period, and it can be steeped several times.

Preparation:
To prepare Pu-erh tea, use a porcelain gaiwan or clay yixing teapot. If you use yixing, dedicate a specific pot to Pu-erh teas. The ideal water temperature should be somewhere between 95 and 100 °C. For every 100 ml of filtered water, use about six grammes of tea. The first pour is to rinse and ‘animate’ the tea leaves and teaware. The second pour is suitable to drink, and the third and fourth just require ten seconds or so to steep. As the leaves unfurl, adjust the steeping time; most Pu-erh teas can be steeped six to eight times.
Secret tip:
The taste of previously colourless tea can still be quite special. Don’t hesitate to brew it again the next day if you did’t finish it the previous day.
