Description
The everyday Japanese green tea – in the most noble sense of the word. The freshly plucked leaves are steamed, rolled multiple times, dried over charcoal, and eventually cut to a predetermined size. Its leaves appear glossy, poison green, and they are damp to the touch; its infusion is transparent and vibrant green. The fresh, intense flavour is complemented by soft, grassy notes.
Preparation
To prepare, use a Japanese glazed porcelain teapot. Add 7 – 8 g of tea to 150 – 200 ml of purified water. Boil the water and then let it cool down to 70 – 80 °C. During the first infusion, steep for 30 seconds. For subsequent infusions, increase the steeping time and water temperature, but make sure it doesn’t exceed 90 – 95 °C.
Its taste is distinctive, yet gentle, light, and strong. However, it carries a slight bitterness as well. The aftertaste is always somewhat sweet, which becomes more pronounced with each infusion.

Secret tip.
Tea is all about personal taste, therefore, we advise you to find the preparation method that suits you best. If you prefer a “sweeter” tea, steep it for 40 – 60 seconds in 75 °C water. If you desire a “stronger,” more astringent tea, steep it for 30 – 40 seconds in hotter water at 90 °C. Moreover, if you start steeping at a lower temperature and gradually increase it in smaller increments, in that case, you can use the same tea leaves for much longer.
